The team behind the much-loved Dishoom restaurants is delighted to announce that they will open in Edinburgh this winter, creating 100 new jobs in the city.

This will be Dishoom’s first location outside London, opening at 3a St Andrew Square in late 2016. The 100 jobs created for Edinburgh will include openings for chefs, front of house, management and bar team.

Dishoom pays loving homage to the Irani cafés of Bombay. Opened early last century by Zoroastrian immigrants from Iran, there were almost four hundred cafés at their peak in the 1960s. Now, fewer than thirty remain.

Dishoom Edinburgh will be housed in a beautiful 1920s-era Grade A listed building, which was originally built as a warehouse for Forsyth’s department store.

The three-storey restaurant will have an open kitchen on the ground floor, a first floor café / dining room with views across St Andrew Square, and a basement cocktail bar.

Open every day from early ‘til late, diners will be able to enjoy Executive Chef Naved Nasir’s legendary breakfast, followed by an all-day sharing menu of authentic and lovingly curated Bombay comfort food – small plates, grills, biryanis, salad plates, rolls and curries.

The Permit Room bar will be a welcome addition to Edinburgh’s cocktail scene, with a number of signature drinks drawing inspiration from Bombay and Edinburgh’s history and heritage.

The Dishoom team has thoroughly enjoyed exploring the connections between Bombay and Edinburgh. Dishoom Edinburgh’s unique design pays homage to the original Irani cafés and a celebrated character who had a huge influence on both cities – Sir Patrick Geddes[1].

The launch of Dishoom Edinburgh also marks the return of Dishoom ‘Head Babu’[2], Kavi Thakrar, to the capital. Kavi graduated from Edinburgh University and has always maintained an affinity with the city.

Dishoom is bringing together a brand-new team to fill the 100 jobs created for Edinburgh. Dishoom cares deeply about being a great place to work, and invests heavily in its culture, training, rewards and benefits. The Dishoom Edinburgh team will enjoy excellent career development opportunities, and be part of a company that treats its team like family.

“We’re so excited to be opening in Edinburgh – a beautiful city that was my home for several years while I was at university. And we’re delighted that by doing so, we’re creating 100 new opportunities for people to develop great careers in hospitality. We’re really looking forward to settling into our new home in Edinburgh and can’t wait to welcome you there this winter.” – Kavi Thakrar, Dishoom Head Babu
