
Chop House in Edinburgh has a well-deserved reputation for excellent steaks. They work closely with their suppliers to make sure you get the best quality beef possible. Next, their in-house dry-aging process keeps the meat at exactly the right temperature. Time and charcoal grilling takes care of everything else.
You can find a Chop House in Leith, Bruntsfield and Market Street. Each has its own unique style and weekly offers including corkage club, steak and sides, Sunday Roast and Masterclass tasting events. We were invited along to try out their £12 Hanger Steak and Fries lunch under the arches at Market Street.
This type of steak hasn’t crossed our plates before. We were advised that the placement of the cut between the rib and the loin makes it very tender with a meaty flavour. Chef recommends medium rare for optimal taste and texture. Who were we to disagree?

Our steaks arrive sliced thinly, beautifully blushing pink contrasting with a dark caramelised edge. A mound of super-skinny fries and your choice of sauce complete the dish.
I went for a herby green chimichurri sauce and Donnie had the rich bone-marrow gravy. One gives a delicious earthy freshness to the steak, the other enhances the rich comforting meatiness. Both tasted delicious.
The steak is melt in the mouth tender, juicy and flavoursome. Hot coal grilling imparts a smokiness that’s hard to beat. My glass of Orgullo red, Castilla (£7.90) is a super-smooth combination of Tempranillo and Cabernet Sauvignon.
