Ryan’s Pancakes – Just like your granny used to make!
We follow Ryan on Instagram and he’s always baking! At all times of the day, scones, pancakes, rock buns and fruit loaves pop up on his Instagram Story and the pictures make us hungry. We have tried to make pancakes in the past but they have never been a great success. Ryan has shared his pancake recipe with us and we can’t wait to try it out. Hopefully, you will be able to have a bash at making them too – tag us in your pics!

In the meantime – pop over to Instagram and give Ryan a wee follow.
Ingredients
1 mug of Self Raising Flour
1tsp Baking Powder
1tbsp Syrup
2 Eggs
Enough milk to make a thick batter. You should be able to pour the mixture and see a trail. Too runny and your pancakes wont rise.
Method
Sift the self-raising flour into a mixing bowl and add the baking powder.
Make a well in the centre and add the syrup and eggs.
Start pouring the milk in, enough to allow you to beat the mixture. I reckon i use about half to three-quarters of a tea cup full of milk.
Beat the mixture well, bubbles should start to rise through the mixture.
Lightly grease a frying pan and put it on a low heat. Once the pan is hot drop a spoon of mixture into the pan. Wait until bubbles start to rise to the surface of the mixture then flip with a palette knife.
Cook the underside for about a further minute.
Repeat the process with the remaining batter.
Makes approx 15 pancakes.
Then
Boil the kettle and serve the pancakes warm with butter and enjoy!
