One of Scotland’s most iconic restaurants with rooms, The Three Chimneys, in Skye, is set to host a gastronomy-themed weekend break in collaboration with Nyetimber, makers of the finest English sparkling wine, using grapes devoted exclusively to creating Champagne, but grown in the south of England. They are joined by award-winning wine suppliers, Liberty Wines, who have a portfolio of over 260 of the most exciting producers in the wine world.
The residential Food and Wine Tasting weekend is taking place from Friday 17th – Sunday 19th February and includes two nights of five-star accommodation in a luxury suite. On arrival on Friday (17th), guests will be welcomed with afternoon tea. Dinner from the Main Dinner Menu will be served that evening in the restaurant.
Saturday (18th) will begin with an exclusive tour of the brand new Three Chimneys Kitchen and an opportunity to meet the Brigade. A tutored Sparkling Wine Tasting by Nyetimber representative, Michael Bush, will open a buffet lunch served at the Kitchen Table.
The main event will begin in the evening with a Nyetimber Reception with canapés, followed by the Wine Tasting Dinner, hosted by Master of Wine, Jennifer Docherty from Liberty Wines, who has selected wines to match dishes using Skye’s abundant local produce, created by acclaimed Head Chef, Scott Davies.

Normally we fix our Menus and then rely upon our customers’ choice of wines to match their own taste and budget. Of course, we love to make recommendations, but it is fantastic to be working with our wine suppliers in scoping dishes to pre-match the food with the very special wines available.”
Head Sommelier and Restaurant Manager, Petri Pentikäinen, added:
“This challenge is different. We are in full control of choosing an inspiring, perhaps surprising, balance between the food and wine for every course. Nyetimber and Liberty Wines are providing an extraordinary selection of quality wines for the weekend event. These certainly have got our creative juices flowing!”
Petri’s notable Wine List is based upon the same philosophy that guides the whole ethos behind The Three Chimneys Restaurant – provenance and quality, served with integrity and style. The Wine service has been further strengthened recently with the appointment of Charlotte Poynton to the role of Restaurant Sommelier.
The weekend package is available for the all-inclusive price of £850 per person. Alternatively, for non-residents, the Nyetimber Reception and Wine Tasting Dinner on Saturday (18th) is also available for £125.00 per person.
